1 kg deseeded (pitted) elderberries
1 liter of water
2 cloves
1/2 stick of cinnamon
grated zest of 1 lemon
100 g sugar
3 tablespoons of starch flour or ready-made binder
2 apples

Preparation:
Put the elderberries with the cloves, the cinnamon stick, the grated lemon peel, the sugar and the water in a pot and let it cook for about 30 minutes. Then strain everything through a sieve, bring to the boil again and bind with the starch or ready-made binder. The soup can now be served.
For decoration, peel the apples and cut them into wedges, sauté briefly and add a few wedges to each soup bowl as a white spot.
This elderberry soup is a sweet dish that is very healthy and contains a lot of vitamin A, iron and potassium.
