Ingredients:
525g sugar
300 ml water
4 large, fresh elderflowers
2 tablespoons white wine vinegar
Juice from one lemon and the peel cut into strips
4 liters of water
Pot
a 10 liter container made of plastic, ceramic or wood (bucket, rum pot, barrel, etc.)
Sieve and/or linen cloth
ladle
Screw bottle, bottle with snap cap or cork
Preparation:
Bring the 300 ml of water to the boil in a pot and dissolve the 525 g of sugar in it. Put the sugar water in an approx. 10 liter container with the elderflowers, the white wine vinegar, the juice from the lemon, the cut lemon peel and the 4 liters of water. Stir everything well and let it ferment, covered, for about 5 days. Now strain everything through a sieve and/or linen cloth using a ladle and pour into bottles. Let stand again for 1 week. Store in a cool place.
Enjoy the elderberry sparkling wine very cold, with ice and a slice of lemon, for example.
