Wild herbs Salad 1

For 4 people

wild herbs Salad


1 small firm lettuce

1 handful of watercress each,


young dandelion leaves,

daisy petals,

wild garlic leaves,

Beavernelle leaves

some daisies

3 tbsp rapeseed oil

1 tbsp wine vinegar

2 tbsp herbs of your choice


black pepper

2 bowls (small and large)


First wash and clean the lettuce. Then wash the watercress, sorrel, young dandelion leaves, daisy leaves, wild garlic leaves and beaver leaves, shake them off and tear them into bite-sized pieces. Put everything in a large bowl.

Whisk oil, vinegar and chopped herbs into a vinaigrette in a small bowl and then season with salt and pepper.

Pour the cold sauce over the wild herb salad and fold everything in well. Garnish with the daisies and then serve.

What is a vinaigrette?

Vinaigrette is a cold sauce made from vinegar, oil, salt and, depending on the recipe, other ingredients such as herbs and mustard. It is served with salad, boiled vegetables, meat and steamed fish.
