Sweet and sour sauce - basic recipe


500 g fresh chili

500 g onions

1 whole head of garlic

250 g pineapple, banana, mango, kiwi, apple, pear

Olive oil

First, the onions and garlic bulb are peeled and then finely chopped. Then fry the finely chopped onion and garlic in a pan with plenty of oil. Halve the chilies, remove or add the seeds and fruit skins (depending on how hot you want it, roast them and sauté them on a low heat for about 1/4 hour to 20 minutes. The chilies should be very soft. Now add the remaining finely chopped ingredients Add and sauté again until the fruit is also soft.

Finally, turn everything through the meat grinder or the Lotte liquor (please do not use the blender) and pour into small jars, add a little oil and close tightly. Don’t forget to label it with your name and date.

If you work properly, the sweet and sour sauce will last a long time. Once opened, it must be stored in the refrigerator and used as soon as possible.
