The salsify is one of the daisy family and originally comes from southern Europe. It reaches a height of between 60 and 120 cm. The coveted cylindrical root is formed in the first year and the plant produces its flowers in the second year. Only the root, which can be up to 50 cm long, is harvested.
The root is good for diabetics because of the inulin.
In the kitchen it is used as a winter vegetable, which has a delicate, slightly nutty taste that is reminiscent of asparagus. Since the roots immediately turn brown when peeled, you should immediately put them in water acidified with lemon juice or vinegar. The salsify is eaten cooked.
