For 2 to 5 glasses
Ingredients:
500 g porcini mushrooms
3 cloves of garlic
5 shallots
Salt
Water
150 ml vinegar
3 teaspoons of sugar
1 teaspoon peppercorns
1 small sprig of lovage
2 sprigs of thyme
1 bunch of tarragon
1 bay leaf
2 juniper berries

Preparation:
Clean the mushrooms and cut off the lower stem section. Peel off the garlic cloves and the shallots. Then quarter the shallots. Cut the lovage, thyme and tarragon into small pieces.
Bring 500 milliliters of salted water to the boil in a pot and add the mushrooms. Then bring to the boil for 6 minutes and pour off the broth. But collect the broth and set it aside!
Put the garlic, shallots, vinegar, salt, sugar, peppercorns, lovage, thyme, tarragon, bay leaf and juniper berries in a pot and pour in 300 ml mushroom stock and bring to the boil. Finally add the mushrooms and let them cook briefly again. Then let the whole brew cool down and fill it into glasses. Don’t forget to label it with your name (mushrooms in sour lovage marinade) and date.
