Mediterranean vegetables in olive and garlic marinade

For 2 to 5 glasses


Ingredients:

200 g cauliflower florets

200g carrots

200g zucchini

200 g mushrooms

2 cloves of garlic

5 tablespoons balsamic vinegar

6 tablespoons olive oil

Salt

black pepper

2 tablespoons fresh, finely chopped herbs e.g. E.g. rosemary, thyme, thyme, sage

Preparation:

Wash and chop the cauliflower florets, carrots and zucchini. Then bring some salted water to the boil in a pot and add the vegetables for 1 minute. Now drain through a sieve and rinse the vegetables with cold water. Drain and then place in a well-sealed container.


Peel the garlic cloves and cut them into fine slices. Place in a bowl with the vinegar, oil, salt, pepper and all the herbs and stir to form a marinade. Now pour over the vegetables and chill for 12 hours. Stir gently occasionally.


Just before serving, season the vegetables again with salt and pepper. Drain a little, arrange the Mediterranean vegetables on a platter and serve.
