Lemon balm juice

Ingredients:

3.5 liters of water

2 organic lemons

7 large stalks of lemon balm

500g sugar

375 g preserving sugar

30g citric acid

1 packet of preserving or preserving aid


2 bowls

Linen cloth

bottles


Preparation:

First, cut the lemons into slices. Then place the lemon balm stalks in a bowl and spread the lemon slices on top. Now mix the water and citric acid well in another bowl and then pour over the lemon balm and lemon slices. Now let the whole thing stand for 24 hours.


After a day, the liquid can be filtered through a linen cloth, squeezing out the lemon balm and lemon slices well. Collect the filtered liquid again in a bowl and dissolve the sugar, preserving sugar and preserving aid in it while cold. Stir everything in well. Once everything has dissolved, it can be bottled. Don’t forget to label it with your name and date.


You can drink the lemon balm juice diluted with water, for example. Store the bottles in a cool place and use them as soon as possible.
