Hildegard spaetzle

Ingredients:

1 teaspoon fennel

1 teaspoon powdered nettle

2 teaspoons fresh or powdered lovage herb

400 g flour

250 ml water

4 eggs

Salt


Bowl

Mixer with kneading hooks

Spaetzle slicer


Preparation:

Put the flour in a bowl and mix with fennel, nettle and lovage. Then slowly add the eggs, a little salt and finally the water while stirring constantly, preferably with a mixer. You should get a slightly tough dough. Let the dough stand for 15 minutes and then knead it again. The glue in the flour will still set, if the dough is too stiff just add a few teaspoons of water.


Now fill a large pot with approx. 2 liters of water, add some salt and bring to the boil on the stove. When the water is boiling, you can use a spaetzle slicer to slice the dough into the boiling water. If the dough/spaetzle floats to the top in the water, they are ready and can be kept warm, for example in the stove. Repeat the process until all the dough is used up.


Once all Hildegard spaetzle are ready, serve immediately.
