Herbal croissants


550g flour

30 g yeast or yeast packets

2 teaspoons sugar

¼ liter of milk

2 teaspoons cumin

1 onion

1 bunch of parsley

1 bunch of chives

9 tablespoons oil

1 to 2 egg yolks

Caraway seeds or grated cheese for sprinkling


Hand mixer with dough hook

Put the flour in a mixing bowl and then add the yeast, sugar and a little milk. Now mix with a hand mixer for at least 5 minutes to form a smooth dough and leave covered in a warm place for 30 minutes.

Meanwhile, wash the herbs, shake them out a little and cut them into small pieces. Peel the onion and chop it finely.

After half an hour, add the herbs, caraway, onion, remaining milk and oil to the dough and knead until it is nice and smooth and bubbles.

Form small croissants out of the dough and place them on a greased baking tray. Now keep it warm again so that the croissants can rise well. After about 30 minutes, whisk the egg yolk and brush it over the croissants. If you want, you can sprinkle caraway seeds on top or grated cheese, etc. if you like.

Bake the Herbal croissants in the preheated oven with top and bottom heat for about 25 minutes.
