Herb butter with fennel

Fennel seed is very popular as a tea, the root tastes good as a salad or vegetable, but the delicate green seems to be rarely used. It is simply delicious as a herb butter with freshly baked bread.

Herb butter with fennel


1/8 kg butter

2 tablespoons fresh, finely chopped fennel greens

1/2 grated lemon






Let the butter soften and stir until it is white and foamy. Add the fennel greens and the grated lemon to the softened butter. Season with a little salt and freshly ground black pepper.

The soft herb butter can be easily formed into a roll with your hands (hold your hands under cold water and do not dry them). Wrap the roll in aluminum or cling film and let it firm up again in the refrigerator.


Cut thin or thick slices before use. The herb butter with fennel goes perfectly with fine salmon (cold or warm), but also with all other fried or grilled fish.
