Habermus to Hildegard

Habermus

Ingredients:

4 cups of spelled meal

4 apples

4 knife tips of galangal powder

4 knife tips of Bertram powder

8 teaspoons of honey

Cinnamon

8 cups of water

Preparation:

Pour 8 cups of cold water into a pot and stir in the spelled meal. Bring the whole thing to the boil very carefully for 5 minutes, stirring constantly. Cut the apples into pieces and add them with the spices and honey and stir in. Then let everything simmer over low heat for 10 minutes. Remove the pot from the heat, distribute it on plates and sprinkle some cinnamon over the finished Habermus before serving.


 

For 2 people


Ingredients:

200 g spelled meal

1 teaspoon honey

1 pinch of galangal

1 pinch of cinnamon

1 apple

1 teaspoon chopped sweet almonds

Juice of 1/2 lemon

500 ml water


Preparation:

Pour half a liter of water into a pot and stir in the spelled scraps, stirring constantly until it boils. Then add the honey, galangal and cinnamon and simmer for 5 minutes over low heat.


In the meantime, core the apple and cut it into small pieces. Then add the apple pieces and simmer for another 5 minutes.


Now remove the pot from the heat and pour the puree into bowls, sprinkle with the almonds and drizzle with lemon juice.

Warning: This dish is dehydrating. That's why you should drink as much as possible, ideally a mixture of three parts mineral water and one part fruit juice.
