Galangal is closely related to ginger and, like ginger, has a sharp, somewhat sweet taste. The true galangal (the small one), is used medicinally and comes from southern China, while the large galangal comes from Indonesia.

Galangal can be used fresh or dried; the root pieces can then simply be cooked with the respective dish. It goes well with potato soups, vegetable stews, goulash or beef dishes, but also in gingerbread and spiced biscuits. Wherever ginger fits, galangal also has its place. It harmonizes with garlic, pepper, coriander, fenugreek, caraway, fennel and cinnamon.

Hildegard von Bingen: Galangal is medicinal and the spice of life. If you have pain in your back or side, boil galangal in wine and drink it often. Whoever has heartache and is weak in heart, let him eat a lot of galangal and he will feel better.
