In the kitchen you can eat Common cat´s-ear cabbage as salad or spinach. The flower buds taste good in vegetable preparations. The larger leaves should be placed in cold water beforehand to debitter them.
The taproot can be dried and roasted and used as a coffee substitute.
Common cat´s-ear is very similar to dandelion. However, the leaves are hairy and fleshy and the stem that carries the flower is branched and leafless.
