The wild carrot grows to a height of 30 to 120 cm. The flower stalks are green, hairy and may have long red stripes. They are thin and have a thin cavity in the middle. The umbels are arranged in a dense pattern and grouped together to form a larger umbrella-shaped cluster. They are flat at the tip and 3 to 4 inches wide. The flowers can be pink as a bud and white when in full bloom. There is a single reddish or purple flower in the center. This red or purple flower is a definite hallmark of the wild carrot, but not all species are this color. When the flowers die, the wild carrot flowers curl up into a bird's nest as they dry out. The leaves are lanceolate, toothed leaflets. Each leaf is 5 to 10 cm long and slightly hairy on the underside. The plant has a single thin taproot shaped like a carrot.

🛑 Do not use during pregnancy or breastfeeding. There are many poisonous lookalikes, so be careful with proper identification.

Wild carrot

An unmistakable sign of the wild carrot is the black dot in the middle, which at first glance looks like an insect.

In the kitchen, the carrot, wild is used as well as the vegetable carrot. It is best used as a juice, especially as a vitamin A supplement. Together with the chicory root, the roasted roots make a coffee substitute.
