Caper substitute made from nasturtium buds and seeds

2 recipes for the caper substitute, one from the buds and one from the seeds.


Caper substitute

Ingredients:

Nasturtium flower buds

Salt

Vinegar


Bowl

Kitchen roll

Glass


Preparation:

Put the nasturtium flower buds in a bowl and sprinkle with salt. Then let it stand for 1 day. After 24 days, the flower buds are placed on paper towels and dried slightly. Then put the buds in a glass and pour vinegar over them. Close or sterilize well.


The nasturtium is used in the same way as capers, therefore a caper substitute.

 

Nasturtium seeds in vinegar


Ingredients:

Nasturtium seeds

Salt

Garlic

Onions

Peppercorns


Preparation:

Pick the seeds on a dry day while they are still green. Soak in salt water for 24 hours, then remove and let dry.


Pour into small screw-top jars and bring to the boil in apple cider vinegar with any herbs, salt, garlic, onions and peppercorns. Pour over the cress seeds so that they are well covered. Seal the jars and let them stand for about 1 month. Use quickly after opening.
