Spelled cookies

Ingredients:

250g butter

500 g crunchy spelled flakes

2 eggs

150 g cane sugar

1 vanilla pod, pulp scraped out

2 tablespoons galangal

2 tablespoons spelled flour

Butter for greasing the baking tray

Pan

Bowl

Whisk or hand mixer

Preparation:

Heat the butter in a pan and lightly toast the spelled flakes in it. Remove the pan from the heat and let the mixture cool down.

Crack the eggs into a bowl and mix with the sugar, vanilla pulp and galangal until frothy. Stir the flour and toasted flakes into the mixture.

Then preheat the oven to 180° Celsius and grease the baking tray.

Form small piles with 2 teaspoons and place on the baking tray. Let the spelled cookies bake for about 15 minutes.
